🧾 Ingredients (serves 4)
-
4 chicken breast fillets
-
200 g Bliss Point aged graviera with thyme, grated
-
2 tbsp olive oil
-
1 garlic clove, finely chopped
-
1 tbsp Dijon mustard (optional)
-
Salt and freshly ground black pepper
-
100 ml white wine (optional, for deglazing)
-
50 g butter
-
A few drops of fresh lemon juice
-
Toothpicks or kitchen twine, for securing
👩🍳 Instructions
Prepare the filling
-
In a bowl, combine the grated Bliss Point graviera, garlic, Dijon mustard, and thyme. Season with salt and pepper.
Stuff the chicken
-
Using a sharp knife, carefully cut a pocket into the side of each chicken fillet without slicing all the way through.
-
Fill each fillet with the graviera mixture and secure with toothpicks or kitchen twine to prevent the filling from escaping.
Sear
-
Heat the olive oil in a large non-stick pan over medium heat.
-
Sauté the stuffed chicken fillets for 3–4 minutes per side, until nicely golden.
Deglaze & cook
-
Deglaze the pan with the white wine and let the alcohol evaporate for 1–2 minutes.
-
Add the butter and gently swirl the pan until melted, coating the chicken.
-
Finish with a few drops of lemon juice for freshness and balance.
Finish cooking
-
Lower the heat and simmer gently until the chicken is cooked through and tender inside.
🍽 Serving Suggestions
Serve with mashed potatoes or creamy cauliflower purée, alongside a light green salad or roasted vegetables.
Sprinkle a little extra grated graviera over the chicken just before serving for an even richer cheese flavor.
Pair with a chilled Assyrtiko or an aromatic Moschofilero, whose freshness and acidity perfectly balance the richness of the aged graviera and butter.
