Vegetarian Salad with Bliss Point Cave-Aged Graviera

🧾 Ingredients

Serves 2

For the salad

  • ½ loaf of bread of your choice

  • ½ cup olive oil

  • 2 garlic cloves, crushed

  • 1 tender lettuce, roughly chopped

  • ½ red oak leaf lettuce

  • 6 spring onions, finely chopped

  • 2 tbsp fresh parsley leaves

  • 125 g Bliss Point cave-aged graviera, grated

For the dressing

  • ½ cup Bliss Point cave-aged graviera, grated

  • 2 tbsp mayonnaise of your choice

  • 1 garlic clove

  • 2 tbsp lemon juice + lemon zest

  • 1 tbsp mustard

  • 2 sprigs fresh thyme

  • ½ cup olive oil


👩‍🍳 Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a bowl, mash the garlic with the olive oil using a fork.

  3. Dip the bread slices into the mixture, making sure they are well coated on both sides.

  4. Arrange them on a baking tray lined with parchment paper.

  5. Bake until golden, about 10 minutes, then set aside to cool.

  6. In a large bowl, add half of the croutons, half of the spring onions, all of the lettuce and red oak leaf, half of the graviera, and the parsley. Toss gently.

  7. Divide the salad between deep plates or bowls and garnish with the remaining ingredients.

  8. Finish by drizzling generously with the dressing.
