Black truffle graviera is produced in Viotia and contains exclusively sheep milk from selected breeds of the area and black truffle collected in the mountains of Chalkidiki.
San Michali cheese is produced exclusively in the island of Siros. It contains only cow’s milk collected from local breeds of the island as this provides the production process as a Protected Designation of Origin.
Produced in Crete, cave aged graviera, as the name indicates it has a special way of aging in caves. It contains mostly sheep milk and a little goat’s from selected breeds of mountainous Crete.
We are often with them in the production process, so that we know each stage of processing,
but also to discover new ideas and innovations together.
